Creamy Cheese Cauliflower with Bacon

I will tell you a secret about this food. I made it because I really wanted a bacon creamy macaroni. It is true that now I have temporarily lost my taste and smell because of the covid, but the taste experiences still live on in me … 

I remember when my husband and I walked on Ráday Street in Budapest around 2015, and entered a nice little restaurant. We swallowed hard because of the pervasive divine scents. The aroma of garlic was mixed with the aroma of toasted bacon and cheeses. We couldn’t wait to serve the bacon creamy macaroni. Of course, we both ordered the same thing and didn’t regret it, and then we went back for weeks to eat the same food, until once I made it at home, only with a much larger portion. I would have eaten a creamy macaroni with bacon now like this!

 

Now, however, since we no longer eat pasta, I had to figure out something else that has as neutral a taste as pasta but is free of carbs. Cauliflower is always a good solution for this because there are only 3 g of carbs per 100 g. And the rest is just a matter of seasoning. Believe me, you won’t miss the pasta out of it and you’ll be perfectly satiated with this Creamy Cheese Cauliflower with Bacon.

    Directions

    Step1

    Cut the cauliflower into pieces, place on a baking sheet lined with parchment paper, salt, pepper and squirt with olive oil, then bake in a preheated oven for 20 minutes at 350 F / 180 C.

    Step2

    Cut the bacon, onion, parsley greens and red peppers.

    Step3

    Grate the three types of cheese.

    Step4

    Fry the bacon in a little olive oil.

    Step5

    Add the chopped onion and red pepper and fry further together.

    Step6

    When the bacon, onions and peppers are blushed, add the cream.

    Step7

    Let the cream boil.

    Step8

    When the cream boils, add two types of cheese. Leave the third half to the end before serving. Melt them while mixing.

    Step9

    Add the fried cauliflower pieces to the cheese mixture. Gently swirl with the sauce.

    Step10

    Sprinkle with chopped parsley greens.

    Step11

    At the end, sprinkle on the third type of cheese as well.

    Step12

    Wait for the cheese to melt and serve immediately.
