Keto Gluten-free Yeast Dough Strawberry Rolls

I’ve baked a lot of yeast dough with cereal flour already, but this Keto Yeast Dough Strawberry Rolls is the very first I’ve made with keto accepted flour. I have interesting experiences that I am sharing with you.

First of all, grain flours are much more finely ground and have a gluten content, which gives yeast doughs a mesh structure and makes the dough stretchable. If the flour does not contain this gluten, the dough will be crumbly, inflexible, brittle. Therefore, gluten substitutes must be added to yeast dough made with gluten-free flour. But don’t be scared, you don’t have to think about “plastic” additives right away. You won’t find such additives in my recipes because I wouldn’t eat them either. But now I will show you one or two of these gluten-free natural additives, which I also like to use to replace gluten.

Here are some of gluten-free natural additives:

  • Psyllium husk (Fiber Husk)

It is one of the best known vegetable fibers, practically 100% of which is dietary fiber, so it not only helps to achieve the right quality of pasta, but it also has a positive effect on the functioning of our digestive system. Plus, that’s why it doesn’t count in carbs either. (1-2 teaspoons of ground psyllium should be mixed in about 200 ml of liquid and then mixed with the dough. No more, because the taste will be decisive.)

  • Chia seeds (Aztec Sage)

These teeny-tiny seeds have a very high dietary fiber content and an unsaturated fatty acid content, which is why they are becoming better known. Excellent gelling agent when dissolved in water. It can be used to make baked goods, but it is also excellent for puddings and yoghurts.

I used both ingredients in this recipe and the protein in the 3 eggs also replaces the missing protein in the dough. Because of the many eggs, I put the yeast in less milk, but the dough will still be sticky. Although the flour mixture I used was not as finely ground as an all purpose white flour (because I ground it myself using a coffee grinder), this yeast dough is sticky, but not because of coffe grinder. Unfortunately this is the case, this is what the lack of gluten does. But no problem, the plastic foil helps to stretch and roll up the dough easily.

I was afraid because I thought the dry yeast didn’t work. I always used fresh yeast in Hungary, but have to say the dry yeast works very well. I also thought that the yeast didn’t work with other types (gluten-free) of flours, but it’s not true, because my yeast dough is almost over raised, so I have to believe the yeast can work with other types of flours too.

While it’s a little more work to make such a yeast dough than a “quick mix” sponge cake, I think it’s definitely worth the effort. From the slightly ugly sticky dough, we finally get sweet, low-carb, heavenly rolls filled with keto strawberry jam.

Directions

Step1

Put the dry ingredients in a deep bowl and mix well.

Put the dry yeast in a mug of 3 tbsp lukewarm milk (or water) and add a teaspoon of sugar. This is needed by the yeast because without sugar the yeast will not rise. Only work with a plastic spoon because yeast doesn’t like metal.

While the yeast is working, put the eggs in a deep bowl with the salt and sweetener and mix well.

Pour the flour mixture into the egg mixture and mix them together.

Add the melted butter and sour cream and mix with them.

The yeast rises in a few minutes, then it can be added to the dough.

Pour the yeast over the dough.

Work the dough together with the yeast. You will get a pretty sticky dough. Cover the dish with a clean cloth and let it rest in a warm place for ten minutes.

After ten minutes, the dough will rise a little and become looser. Then place the dough on a sheet of foil the size of a baking sheet, then place another sheet of the same size on top.

Between the two sheets, stretch the dough to a thickness of 0.5 - 1 cm (2/8-3/8").

Spread the stretched dough with keto strawberry jam, then roll up using the bottom foil starting at the longer side.

Cut the rolled dough into pieces of about 3 cm (~ 1 1/8 "). You will get 12-13 pieces of small rolls. Place these rolls in a baking tin with a baking paper.

Brush the rolls with a little heavy cream and cover. Meanwhile, turn on the oven at 180 C / 350 F. Until the oven reaches the temperature, leave the rolls covered and rest in a warm place. When the oven has warmed up, put in the rolls.

Bake the rolls for 25-30 minutes. If the tops of the rolls begin to tan too quickly, cover them with aluminum foil to avoid burns.

When the rolls have cooled, pour icing on the rolls and serve.
