My First Cloud Bread – Keto, Low-carb, Gluten-free
This cloud bread is a curiosity for me and I had to try it. Mainly because I was confused not long ago because I couldn’t imagine my life without bread. I admit heroically, that’s why I started the keto diet two months later than my husband because I couldn’t imagine what I was going to eat instead of my breakfast sandwich when I wouldn’t eat bread anymore??? !!! Today, of course, I don’t even eat breakfast and rarely miss bread. But getting this far, I admit that too, wasn’t easy because I loved bread with lard, onions and lots of tomatoes, peppers … it’s part of our Hungarian (and Eastern European) culture.
Although this bread does not resemble a traditional, sourdough or fermented bread, but it is low-carb, so Keto-friendly, not included grain, so gluten-free, and very-very guilt-free. What’s not to love?
Cloud bread is fluffy, airy, light and easy to melt on your tongue. But it is firm enough to make a sandwich or dipping.
In addition, a pair of cloud bread contains only 3.3 grams of carbs!
If you don’t want to quit sandwiching but want to stay low on carbs, I definitely recommend you try this kind of cloud bread. You can smear it with cream cheese, butter, you can add bacon slices, salad, vegetables, but you can also smear it with keto jams or peanut butter.

Directions
Separate egg yolks from egg whites. Set aside the egg yolks, it will not be used in this recipe. In another bowl, measure the flour and baking powder, then mix the baking powder with the flour.
Mix egg whites and salt for 5-7 minutes, with a hand or stand mixer, until you get hard foam, then pour in the flour mixture and mix gently, but do not crush the egg white foam very much.
Grate the very cold butter on a large hole grater or cut into cubes of similar size (5x5 mm / 1/4 x 1/4 ") and then mix in the egg white flour mixture.
Place small stacks on a parchment-lined baking sheet.
Bake at 300 F/ 150 C for 20-30 minutes depending upon the size of your pieces of bread.
They are done when the bloated up clouds turn light golden brown.
